Our wine cellar installations were inaugurated in 2002. There, we have all the resources and technology needed to ensure that all the work of production, processing, bottling and labeling is done entirely in our installations with a complete control from the vineyard to the delivery of wine to our customers, all these processes are secured, controlled and managed by our family.
The way of working is very similar to that used by the prestigious “chateau” of France, with grapes from our own vineyards and a winemaking traditional and craft.
The wine cellar is composed of the following work areas:
In this area we receive the grapes collected in the vineyards, which are transferred to the winery in transport with a maximum of 2,500 kg, which avoid unnecessary crushing and the grapes reach the entire winery and unbroken. . The vineyards are located within 10 minutes from the winery, which guarantee that the freshly cut grapes reach the winery and as fresh as possible. And in the cellar we do soft shelled grape thus keep intact their natural qualities also seek to encourage all shipments of grapes by gravity, with minimal step for any type of machinery. At all times, it takes a comprehensive temperature and analytical control, to have the exact parameters elapses while fermentations. Through a cold maceration process for about 4-5 days and continuous manual daily pumping, got drawn intense fruity aromas offered by the grape variety, while we got a perfect stabilization of color. This room has a natural ventilation system through a unique system of air extraction, which is renewed daily winery replacing air with clean and fresh air of the night and completely renovating the ventilation in the cellar, maintaining a high quality facility in the air.
It situated 8 meters deep under the earth, in the best natural conditions of temperature, humidity and conservation for breeding and keeps perfect wine. In the cellar the temperature is constant throughout the year, between 14ºC and 17º C. In this area, the barrels of French and American oak, selected by our technical director among the best craft coopers, to carry out the process in casks that best suits the characteristics of our wines. The filling of the barrels is done by gravity, avoiding any machinery that can alter the natural structure of the wine itself. In the cellar, it is located the bedroom of bottles, where once the wine is bottled, rests at constant temperature and humidity, carrying out the process of aging in bottle in perfect condition. All our wines are stored throughout the year in the underground cellar where ideal conditions warrant conservation. After his time in barrel, we homogenize all wine to achieve a constant regularity in each batch.
To this room come the wines produced and having previously spent time in the barrel, controlled and analyzed for our technical director and meeting the quality standards required by Bodegas Fuentenarro for its wines. The bottling is done on the property, we have own bottling line, where we proceed to the filling of the bottles by gravity system, not to alter the natural characteristics of the wine, we also used a unique vacuum control system in bottling which keeps intact all the qualities of the wine, since bottled until consumption. Once bottled, we moved the bottles in crates to the cellar, where they carry out the
process of aging in the bottle, where rest for the best natural conditions of temperature, humidity and silence, as our ancestors did. The labelling of each bottle is also carried out in our facilities, we have a line of own label making process prior to the delivery of wine to our customers and a detailed traceability control, which ensures we have control of each bottle place in the world where you are.
